Sizzling Spicy Chicken Slices

Spicy, sizzling, and savory with just a hint of sweetness, this dish is sure to start off any meal right. The sizzling refers, not to the temperature of the chicken, but to the fiery, tingly sensation of the Sichuan peppers.

Sizzling Spicy Chicken Slices

Sizzling Spicy Chicken Slices can be made two different ways. The first is by thinly slicing Boiled Chicken Breasts as in the following recipe. The other is by chopping an entire half of a Boiled Chicken (skin-on, bones-intact) into one-inch-thick strips in the same manner as Mouthwatering Chicken (口水鸡). Whatever method is used, the Boiled Chicken will be coated in the delicious numbingly spicy sauce.

These chicken slices can be easily prepared before other dishes and stored in the fridge until ready to eat. At the beginning of a meal, the Sizzling Spicy Chicken Slices can be set on the table along with any other appetizers so that guests can snack while the larger dishes finish cooking. Appetizers are not a standard course for most meals; however, Cold Chicken Dishes such as this one are often served first since they can be prepared hours in advance.

Sizzling Spicy Chicken Slices uses a Red Oil Sauce like many other Cold Chicken Dishes. Unlike the Red Oil Sauces given for Red Oil Chicken Bites (红油鸡块) and Mouthwatering Chicken, the sauce here focuses intently on the Sizzling and Spicy (麻辣). There is quite a lack of Aromatic ingredients with emphasis placed around the Chili Oil and Sichuan Pepper Oil. This Red Oil Sauce also has a bit of sweetness, and the flavor is quite similar to the sauce used for Leshan-style Bang Bang Chicken (棒棒鸡).

Ingredients

2 Boiled Chicken Breasts

1 8-inch white stalk of Big Scallion (大葱)

Garnishes
3 fresh Red Chilies
1 sprig of Cilantro
1 tsp. roasted Sichuan Peppercorns
1 tsp. Sesame Seeds

Red Oil Sauce
1/2 cup of Chili Oil with Chili Flakes (OR 6 Tbsp. Chili Oil 红油 + 1 Tbsp. Oil Chili Flakes 油辣子)
1/4 cup of Chicken Stock (Preferably: Soup from cooking the Chicken)
3 Tbsp. Light Soy Sauce
2 tsp. Sichuan Pepper Oil
1 Tbsp. White Sugar
1/2 tsp. Ground Sichuan Pepper
1/2 tsp. Salt
1/4 tsp. Ground White Pepper

Directions

1.) Slice the Boiled Chicken Breasts as thinly as possible around an 1/8-inch to 1/4-inch thick. When cutting, use a sharp knife and cut crosswise at an angle to get the best slices.

(If using 1/2 of a Boiled Chicken, chop the pieces a bit thicker at around 1/4-inch to 1/2-inch thick).

2.) Lightly smack the Big Scallion with the flat of a cleaver. Cut the Big Scallion on a bias, slicing at a 45-degree angle to get long ‘horse ear’-shaped pieces. Arrange the Scallion in the bottom of the serving dish.

(Cucumber can be used in place of Big Scallion for an interesting contrast to the Red Oil Sauce).

3.) Prepare all of the Garnishes, placing each one on a separate area of the same plate:

  • Cut the Chilies into 1/2-inch pieces.
  • Roughly chop the Cilantro.
  • Lightly toast the Sichuan Peppercorns in a wok over low heat for about 1 minute or until fragrant.
  • Lightly toast the Sesame Seeds in a wok over low heat for about 1 minute or until fragrant.

(These Garnishes are only a suggestion; others could be used including a finely sliced green stalk of Small Scallion, julienned slivers of the white stalk of a Big Scallion, and Peanuts).

4.) Combine all of the Red Oil Sauce ingredients (Chili Oil, Chicken Stock, Soy Sauce, Sichuan Pepper Oil, Sugar, Ground Sichuan Pepper, Salt, MSG, Chicken Bouillon Powder, and Ground White Pepper) in a large mixing bowl and mix thoroughly to emulsify.

5.) Arrange the Chicken slices on top of the Big Scallions and drizzle the Red Oil Sauce over the Chicken making sure to cover every piece.

(The Chicken can be arranged a couple different ways. They can be shingled on top of each other either in a circular pattern or in a straight line. The pieces can also be placed tightly together or arranged like Mouthwatering Chicken).

6.) Sprinkle the Garnishes over the Sizzling Spicy Chicken Slices and serve immediately. Before eating the Chicken Slices, mix everything together thoroughly.
